Beer Battered Onion Rings

This recipe will knock the socks off of you! Just don't blame me if you fall in love with them and want to make them every day!!
Our Ingredients
Beer Battered Onion Rings
One large Vadalia Onion
2 Cups Unbleached White Flour (you will not need all of this)
12 ounces of your favorite vegan beer
1 Tablespoon Brown Sugar
1 teaspoon Sea Salt (plus more for after they are done)
3 1/2 Cups Oil for frying (Canola or Safflower)
In a 2 Quart saucepan bring oil to medium high heat for frying. (about 375 degrees) You can use a
thermometer to check the temperature if you would like. Make sure the oil is NOT boiling!!!
Peel onions and cut into rings. (I usually cut my onion into thirds) Separate rings.
In a medium bowl add 1 Cup Flour, Beer, Sea salt, and Brown Sugar and whisk together. You may add
more flour by tablespoon to make the batter to your liking in consistency. (it should be like a
pancake batter)
Add rings to batter and place in oil. BE CAREFUL not to splatter yourself with oil! With a slotted
spoon turn onion rings as they cook. When they are cooked to a golden brown take them out of the
oil and place on a plate that has a paper towel on it to soak up any extra oil. Add a sprinkle of
sea salt and let cool. Don't wait too long though...you don't want these to get soggy!

Very cool dish. I've found that using a chinese spider strainer really helps removal of fried foods from the hot fat. For a bit of and Asian kick, a little dash of sesame seeds in the batter and some sesame oil mixed into the frying oil is quite nice. Just as a personal preference (not everyone cares for it this way) I like my onions sliced up really thin when I make onion rings, because I'm really after the fried batter.

Amazing Onion Rings! I used Yuengling Traditional Lager and they turned out great. Next time it's definitely going to be Guiness. I would have started with Guiness, but I was a bad Irishman the day I tried this recipe and didn't have any Guiness in the fridge.

wow, tasty tasty fried food. this will be one to store in the memory banks to wheel out against the 'vegan food is all birdfood' brigade. A good solid and delicious combo of beer, flour, oil and sugar:-)
Ps. it works with chick pea (gram) flour too (GLUTEN FREE) and potatoes (par boiled) mushrooms and other veggies taste just as good. Experiment!
Pps. Newcastle brown is not vegan :-(

I tried Yuengling when I was in Philly (I don't think you can leave without having a lager) and I'm still trying to find someone in LA who carries it. It was such a great beer, I feel vaguely bereft without it...
